Triglyceride molecules

Triglyceride molecules are esters of glycerol (a trihydric alcohol) with a range of different long chain fatty acids. Fats and oils are defined as mixtures of ‘mixed triglycerides’ that is each triglyceride molecule can contain different long chain fatty acids. A ‘drying’ oil has a high proportion of triglyceride molecules containing unsaturated fatty acids.
